Our Culinary Programs
Living Light Culinary Institute has six culinary certifications. Our professional instructors can help you learn to prepare gourmet raw vegan food for yourself and your loved ones. If your goal is to change careers, our certifications will qualify you to become a raw food chef, café owner or spa operator, a raw food instructor, a caterer, a raw gourmet pastry chef, recipe book author or raw food menu developer.
Raw Culinary Arts Associate Chef and Instructor Certification™
In this five-part certification training, you'll learn to prepare delicious, health-promoting, high-energy, raw gourmet foods without giving up flavor, appearance or satisfaction. This program is our core culinary certification and is required for advancement in this curriculum. This certification prepares you for entry into the raw, vegan culinary field, allowing you to transform your home kitchen, teach classes, create your own recipes or work in a café, restaurant or catering business.
Even if you are an expert trained chef, you will encounter a whole new world of food preparation skills that are specific to raw cuisine. If you are new to the kitchen, you will become adept with knife technique and familiar with kitchen equipment and time saving gadgets of all kinds. You will learn how to develop a recipe, combine herbs and spices to create both classic and ethnic flavors without using recipes, balance textures and flavors within individual recipes and entire menus, sprout grains, seeds, and legumes, make luscious live non-dairy cheeses, create raw variations of cooked food recipes, and organize and manage a raw food kitchen.
You will learn to make familiar comfort foods, like pizza, burgers, lasagna, pasta, burritos, bread, pies, cakes, and even hand-rolled truffles. You'll also learn how to organize and present successful raw culinary classes for groups of all size, how to find venues, market classes, and communicate effectively with an audience. Each student will be given the option of presenting a culinary presentation to the class, culminating in certification as a Raw Culinary Arts Associate Instructor. You'll come away from this program a more effective, better organized, more confident culinary presenter. After this training, you'll possess the skills and confidence you need to begin teaching successful classes immediately. Whatever your current level of chef skills, this program is guaranteed to take you to the next level in your culinary journey!

Pastry Arts-Unbaked! Certification
This enhanced culinary program focuses on raw vegan dessert production through a combination of theory, demonstration and practical hands-on training. Students learn the principles involved in the use of binders, thickeners, emulsifiers and gelling agents; how to choose the right sweeteners and fats for a variety of classic pastry recipes and discover the secrets of making exquisite raw desserts that taste even better than famous cooked desserts! They create a variety of professional looking and sublime tasting gourmet raw desserts that tantalize the palate without compromising health!
There are nine sessions available in 2012. Raw Culinary Arts Associate Chef and Instructor™ certified graduates may return for the four-day additional course to complete their new certification. This certification program is taught at the Living Light Center in Fort Bragg, California, and includes the following courses:

Advanced Pastry Arts-Unbaked! Certification
This advanced culinary program focuses on gourmet raw vegan dessert preparation and pastry arts recipe development through intensive, practical and comprehensive training. Once students understand the principles involved in the use of binders, thickeners, emulsifiers and gelling agents, know how to choose the right sweeteners and fats for any given dessert recipe through hands-on training and are confident in preparing a variety of classic pastry recipes, they are ready to create their own fabulous gourmet raw vegan dessert creations.
Living Light pastry chef instructors provide supportive and expert guidance in helping students develop their own recipes and translate favorite cooked desserts into raw vegan desserts.
There are nine sessions available in 2012. Raw Culinary Arts Associate Chef and Instructor™ certified graduates may return for the two additional course to complete their new pastry arts certifications. This certification program is taught at the Living Light Center in Fort Bragg, California, and includes the following courses:

Advanced Raw Culinary Arts Instructor Training Certification™
Living Light's Advanced Raw Culinary Arts Instructor Training Certification™ is an intensive, career-focused series of courses that takes students to the next level of confidence and expertise in teaching raw culinary arts classes.
Courses must be completed within two years. When you complete all six courses of study and receive your Advanced Raw Culinary Arts Instructor Training Certification™, you'll be confident in your ability to make a living marketing and teaching show-stopping raw culinary arts classes. Living Light’s Raw Culinary Arts Advanced Instructor Training Certification™ is based on a standard of excellence and is highly regarded in the vegetarian, vegan, and raw communities.
There are two sessions available in 2012. Program is taught at the Living Light Center in Fort Bragg, California, and includes the following courses:

Gourmet Raw Food Chef Certification™
This certification begins with the five courses that compose the Raw Culinary Arts Associate Chef and Instructor Training Certification™. The three advanced culinary courses expand upon what you’ve learned to do, providing you with extensive experience in flavor balancing, recipe development, food costing and catering.
You will have two 5-day segments of recipe development, where you will learn the importance of contrasts in flavor, texture, and appearance in culinary arts. You will learn how to plate food beautifully, and how to balance flavors to suit any palate. You will become adept at recipe development and recipe writing.
In the Ethnic Flavors class, you will explore flavors of the world and prepare foods from Asia, Latin America, Europe, and the Middle East. In RawFusion Spa Cuisine class, you will learn how to create fabulous recipes and stunning feasts using a limited number of ingredients selected for optimal digestion and weight balance. In the Raw Event Catering and Elegant Entertaining class, you will actually cater an event for the public, and learn to plan, organize and chart your own event, so when you go home, you are ready to begin entertaining friends and family. You will also be introduced to what it takes to start your own catering business and even negotiate contracts with clients!

Raw Culinary Arts Professional Chef Certification™
The Raw Culinary Arts Professional Chef Certification™ is awarded to individuals who demonstrate creativity, expertise and experience in every aspect of raw culinary arts, including kitchen management, food design, recipe and menu development, large event catering, pastry arts, and raw nutritional science. Students must have completed the Gourmet Raw Food Chef Certification™ Series, and are also required to complete all courses of study, including Pastry Arts-Unbaked!™, Pastry Arts-Unbaked!™ Level II, Advanced Raw Culinary Arts Instructor Training Certification™, Raw Culinary Arts Associate Chef and Instructor Training™ Level II, Benefits of Raw Food Nutrition Educator Certification™, Advanced Raw Food Nutrition Educator Certification™, the one-year Raw Culinary Arts Professional Chef™ Training Program, and associated coursework, followed by a comprehensive written and practical examination. This one-year training program is comprised of four quarters:
1. Kitchen Introduction and Integration
2. Pastry Chef
3. Sous Chef
4. Kitchen Management
This comprehensive training program is designed for each candidate and is available by separate application to graduates of the Gourmet Raw Food Chef Certification™. Space in this program is extremely limited.
There are three sessions of our Gourmet Raw Food Chef Certification™ available in 2012. Once completed, you may apply for this program while you are simultaneously taking the additional required courses. Program is taught at the Living Light Center in Fort Bragg, California, and can be completed in approximately one year and three months. It includes the following courses:
