The Green Revolution - Free to the Public Event

Living Light International and the Institute for Vibrant Living are proud to present "The Green Revolution: Healing Ourselves, Healing the Planet." Join keynote speaker John Robbins, founder of EarthSave International and author of Diet for a New America, The Food Revolution, and Healthy at 100, along with the man who dared to tell the truth about the cattle industry, animal rights activist Howard Lyman, aka "The Mad Cowboy", and an address by Living Light director and author of the Raw Food Revolution Diet, Cherie Soria. Rising Star Chef Showcase
This showcase is an opportunity for "up and coming" raw culinary artists who have a passion for teaching to "show their stuff" and get their name out to a group of raw foods enthusiasts! Please join us on Friday, August 21 from 10:00am until 2:30pm in the Living Light Culinary Studio for these fabulous culinary rising stars!
Rawsome Pie Contest - Enter Now!
Everyone is invited to compete in the Rawsome Pie Contest. All entries will be judged on flavor, creativity, color, texture, and presentation. Each contestant is responsible for bringing all the equipment and supplies necessary to create their pie. The entry fee is $25 for each pie entered.
The grand prize winner will receive a $450 scholarship to attend any Living Light Culinary Arts Institute training course at the Living Light Culinary Center in Fort Bragg, California and $100 cash. The second prize winner will receive $50 in cash plus other great prizes! The third prize winner will receive $25 in cash and other great prizes, too!

Discover Raw Green Super Foods From the Ocean!
Terry Nieves, Ocean Harvest Sea Vegetable Company
Thursday, August 20, 2009 from 8:00am to 12:00pm at MacKerricher Beach, north of Fort Bragg. People without cars can meet at 7:45am in the Company Store.
This adventurous and unique 4-hour introduction to seaweeds from the Northern California Coast is presented by Terry Nieves, owner of Ocean Harvest Sea Vegetable Company. Terry is a raw food enthusiast and seaweed wildcrafter, who offers a wealth of knowledge about seaweeds and their nutritional value. Terry is a member of the Seaweed Stewardship Alliance, and works with Mendocino County Schools, educating students about nutrition and gardening.
In this four hour class you will:
- Wade in tide pools rich with marine life at MacKerricher Beach, north of Fort Bragg, to identify and taste several fresh seaweeds, including sea palm, bladderwrack, sea lettuce and Turkish towel. We may also see sea lions, harbor seals and abundant colorful sea life on our walk!
- Gain useful information, which will cover aspects of gathering, harvesting, and drying sea vegetables for your own use.
- Learn about seaweeds' many uses and the nutrients found in seaweeds, some of which include: trace minerals, essential fatty acids (DHA), enzymes, calcium, vitamins and protein found in a condensed form for both eating and the bath!
- Take away recipes, nutritional charts and handouts on how to use and eat seaweeds, as well as have the opportunity to taste several delicious seaweed dishes!
Please wear warm clothing including a hat, bring sturdy water booties or water sandals with wool socks, a towel and a change of pants. Nutrition and Athletic Performance (NAP)

This exciting 2-day intensive course is presented by Dr. Douglas Graham, DC, world-class athletic trainer, author, and lecturer. Dr. Graham is an incredibly compelling speaker who offers a wealth of knowledge and up-to-date information on the science of raw nutrition.
Dr. Doug's book, Nutrition and Athletic Performance, focuses strictly on sports nutrition, but this fantastic seminar will be equally split between sports nutrition concerns and those relating to the big picture and nuances of fitness performance. His website is: foodnsport.com
What is covered in NAP?
From monitoring hydration to eating for optimum nutrient uptake, NAP will review all important considerations of sports nutrition, including such issues as what to eat before, during, and after training and competitions, foods that hinder performance, and how to utilize nutrition to maximize your VO2max. Topics covered will include sodium balance (12 body salts), food combining, overeating and digestion, blood sugar, glycogen stores the relationship between protein and fat, and burning fat.
Fitness theory is discussed in great detail. The terminology of fitness is explained, and a thorough review is given to all five elements of fitness. The creation of your personal fitness plan, body sculpting, and various myths are evaluated. Finally, NAP will teach you how to prep for competitions, and even offer a session on personal problem-solving.

Introduction to Raw Food Nutrition

The Living Light Culinary Arts Institute has teamed up with Raw Food Doctors™ Rick and Karin Dina to offer “Introduction to Raw Food Nutrition,” a fun and informative 4-hour course in the science of raw food nutrition. It will be held on Monday, August 24, 2009 from 2:00pm to 6:00pm at the Living Light Center. This course will provide an abundance of scientifically based raw food education via multimedia presentations and group participation designed to help you gain a greater understanding of raw food nutrition and give you confidence in the role of raw foods for greater health and vitality. Class topics include understanding the caloric density of various foods, the effects of heat on food chemistry, raw food sources of vitamins and minerals, vitamin B-12 and raw vegan nutrition, optimal blood sugar regulation, and the role of essential fatty acids in human health.

FUNdamentals of Raw Living Foods
Tuesday, August 25, 2009 - 8:30am to 5:30pm
Take Living Light’s entry-level class in a one-day intensive format. This course is the first in the Associate Chef training series and is a prerequisite for most other Living Light courses. Dozens of superb culinary presentations will show you everything you need to know to create a wide variety of delicious, easy-to-prepare raw recipes. Create fabulous organic raw vegan cuisine for optimal health and rejuvenation! Rich nut milks and creams, appetizers and pates, cultured foods, smoothies, sauces, dressings, soups and salads, simple entrees, dehydrated goodies and snacks, desserts, Learn kitchen gardening and sprouting, basic knife techniques, and equipment use. Delicious buffet lunch will be served!

Basic Knife Skills 101
Class is open to the general public and is a prerequisite for all Knife Skills classes.
Students will learn:
- Knife safety
- Anatomy of a knife
- Evaluating knives: which knives for which task
- Knife care: keeping your knife sharp
- Proper way to grip a knife
- Slicing, dicing, chopping, and mincing
- Cutting herbs and leafy greens
- Practice makes perfect: hands-on experience
When: Monday morning, 9:00am to 1:00pm (no meal service)
Format: Hands-on; supplies and equipment provided
Textbook required: Knife Skills Illustrated by Peter Hertzmann (not included in tuition cost)
Knife Skills 102 (Observation only - no hands-on)
Prerequisite: Basic Knife Skills 101
This class is a prerequisite for the Precision Knife Skills and Decorative Cuts 201 class.
Students will learn:
- How to cut specific fruits and vegetables quickly and efficiently without waste
- Prepare cylindrical vegetables like zucchini and cucumber
- Cut spherical vegetables, like beets and celery root
- Clean, slice, and dice mushrooms
- Clean, slice, dice, shred, and mince leaks
- Slice and dice celery and fennel
- Cut broccoli and cauliflower into florets and discover the tender stalks
- Julienne bell peppers without waste
- Section citrus fruits and zest the skin
- Cut fruits like mangoes, pineapple, coconuts, apples, pears, avocados
When: Monday afternoon, 2:30pm to 5:00pm (no meal service)
Format: Instructional demonstrations of a variety of fruit and vegetable cuts, primarily those of uncommon shapes; observation/no hands-on format; no special equipment needed

Mini Raw Film Festival Schedule
Cherie and Dan had a wonderful time at the Green Lifestyle Film Festival produced by Dorit of Serenity Spaces in March of this year. And the good news is: we are delighted to announce that many of the great films shown at the Los Angeles event will be a part of the Traveling Green Lifestyle Film Festival at the Vibrant Living Expo and Culinary ShowcaseT this summer! We are adding an Abundant Health Classroom to our already amazing facility here in The Company Store in Fort Bragg, and we'll have a special film venue set up in our new space for continuous showings of the selected films throughout our three day event. Attendees will be able to choose between a talk, a culinary demo, or an amazing thought provoking film!
We believe it's vitally important for everyone to promote these films by sharing them with others, donating them to public access television, local libraries, school groups and other worthwhile organizations. They are a valuable and important resource for getting the word out about the raw lifestyle and how we can all make a difference on the planet in health, consciousness, and sustainability.

Cancellation and Refund Policy
Tickets for the Vibrant Living Expo and related workshops and seminars are nonrefundable, including Introduction to Raw Nutritional Science. You may however, transfer your tickets/registration to another person prior to the event. Please provide transfer notification to Living Light in writing, by e-mail, or fax.
