Living Light Awarded Business of the Year
Living Light International received accolades as Mendocino Coast “Business of the Year” (for companies with 25 or fewer
employees) for 2005/2006. As a new downtown Fort Bragg business starting
out in February 2005, we completed beautiful interior renovations of
three businesses: Living Light Culinary Arts Institute, Living Light Marketplace
and Living Light’s Organic
Café in a record three months, winning also the Fort Bragg Mayor’s Well Done Award for interior improvements to the
Company Store, one of Fort Bragg’s most historic buildings. We’ve
gone from one employee to nearly two dozen in the past year
and are continuing to grow in amazing ways!

Ladermann, are keeping busy as usual. Dan, as a member of the newly formed Mendocino
Coast Healthcare Alliance (a group of physicians, dieticians and
nutritional experts) is serving the local community by helping to bring
nutritional awareness to the public. And Cherie
has scheduled an upcoming teleclass with Fresh
Network in England
on June 21. The fee is in U.S. dollars and the conference call access

will both be presenters at the North American Vegetarian Society Summerfest in Jamestown, Pennsylvania in July.
This
June marks our one-year anniversary at our new location in the Company
Store on Main Street
in Fort Bragg, California. To celebrate our first
delicious and healthy year we are having an anniversary party on
Saturday, June 24th, to thank our students and customers. Drop in anytime
from 11:00 am-3:00 pm to see culinary and product demonstrations, enjoy
samplings of the famous Living Light Cuisine To Go, and in our
marketplace to see our sustainable picnic ware, health-oriented books,
accessories for the raw, vegan kitchen, and organic body care products.
We're really excited about our 2nd Annual Vibrant Living Expo, August 24
through 27, with a great line up of speakers and chefs. Our focus is on
creating successful raw food businesses. Living Light Culinary Arts
Institute students will be catering a public luncheon on Thursday, June
22 and our next Chef series is still open and begins July 8. Call Christy

You're Invited to Be a Vendor
at our Second Annual Vibrant Living Expo
Coming up in August Living Light will be
hosting our second annual Vibrant Living Expo in beautiful Fort Bragg, CA.
This year vendors will set up in The Company Store, along with
presenters, Living Light Marketplace, our Deli and Grab n' Go and
Culinary Arts demo area. The expo runs from Friday August 25 through
Sunday August 27, with a free plenary Thursday evening at 7pm.
The cost for 3 days is $200, and
includes an 8 foot table and two chairs. Vendors will need to supply
their own décor, draping and signage (signage limited to table area). If
using audio/visual equipment, vendors will need to let Living Light know
in advance. There may be an additional electricity charge for use of AV
equipment. No Vita-Mixes or high speed blenders will be used in the
vendor hall.
Vendors May Sell: Raw Food (Prepackaged only), Vegan Products,
Ecological/Green Products, Healthy Living Products, Massage Services,
Musical Instruments, and Organic Textiles Note: animal products will be
prohibited.

CAFÉ/DELI Manager
A highly energetic individual who is skilled at working with the with the public, managing employees, scheduling,
ordering, and creating an enjoyable working atmosphere for both customers
and staff. This person will be comfortable multitasking and using a POS
system. A chef’s
palate, an eye for beauty and an ability to make delicious food is
necessary. Experience preparing raw food would be a delightful bonus!

We are looking
for a few good angels for our 2006 Trainings
Would you like to learn what it takes to
run the kitchen during one of our Chef and Instructor trainings? Would
you enjoy being in the kitchen with some of the world’s top raw food chefs and instructors? Are you a dedicated,
good-natured individual, who appreciates learning by doing a variety of
kitchen tasks? Do you enjoy working in a community of people who are
passionate about raw culinary arts? Can you take a week, two, three, or
even four weeks to spend in pursuit of an opportunity that could change your
life for the better? If your answer to all these questions is YES -- you
are invited to apply for a kitchen angel position at Living Light. The
cost for the program is $20 per day (to cover organic meals). Housing is
not included. Kitchen angels are invited to attend two demos a day while
they are on duty. The benefits each angel receives are directly
proportionate to the energy and enthusiasm they bring to the experience.

The Rising Star Raw Chef
Showcase
Announcing an
exciting event at the upcoming 2006 Vibrant Living Expo ...
Every year we offer fabulous raw
culinary demonstrations from the best internationally recognized
celebrity chefs -- and this year is no exception!
What is exceptional is that this year we will also be offering an
exciting program with culinary presentations by the up and coming
"rising stars" of raw culinary arts.
If you have outstanding talent as a raw food chef, are confident of your
ability to present a 20-minute food preparation demonstration, and want
the opportunity to shine your light on the raw food community -- this is
your chance!
The date of the showcase is Friday, August 25. There is a $100 entry fee
(due only if you are chosen as one of our Rising Star Raw Chef Showcase
presenters), and you will also be responsible for providing your own ingredients.
This includes entrance to the Expo for the entire day of the showcase.
You will also receive a video tape of your presentation and will be
included in the Expo program and on the web site.

Recipe of the Month
A Recipe from
Living Light Executive Director, Cherie Soria
Here are some delicious raw recipes that
qualify as American comfort food: Onion Rings, As pictured in the top
banner. Also pictured is our Zoomburger, which
was featured in the April newsletter. You can view previous newsletters

Crispy Sweet Onion Rings
Servings: 12
Special equipment: dehydrator
5 lbs sweet onions, sliced into 1/4-inch rings
2-3 gallons non-chlorinated water (including 1/2 cup for batter
1 cup solar-dried sea salt
1/4 cup lemon juice
1 1/2 cup orange juice
1/2 cup sesame seeds
1 date, pitted
Pinch of solar-dried sea salt
1. In a large bowl, separate the onions into individual rings and cover
with non-chlorinated water. Add the salt and lemon juice, and allow them
to remain immersed for 1 to 2 hours to soften and remove some of the
strong onion juice.
2. After the onions have soaked, drain them, squeeze them gently, rinse
well with non-chlorinated water, and drain again. Remove the onions to a
dry towel, and allow them to sit for a few minutes while you make the
batter.
3. Combine the orange juice, sesame seeds, 1/2 cup water, dates, and salt
in a high powered blender, and blend until the mixture forms a thick
batter.
4. Pour the batter over the onions in a bowl, toss, and place the onions
evenly on dehydrator trays lined with nonstick sheets, using about 2 cups
of battered onions on each tray.
5. Dehydrate at 105 degrees for 6 to 8 hours. Turn the onions over, and
continue dehydrating until completely crisp, about 12 to 18 hours more.
Allow to cool thoroughly before putting in a
airtight glass container.
6. Store in an airtight container in the pantry for several weeks, or in the refrigerator for 3 months or more.
