This is the season for gathering together with family and friends in the spirit of love and appreciation, with peace in our hearts and goodwill towards all on earth. Living Light sends heartfelt holiday greetings to our students and extended "family" all over the planet - thank you one and all for sharing your light with us in 2008. Every one of you has helped us create another memorable and blessed year, full of the joy of discovering health and happiness for ourselves and our loved ones through the beauty and bounty of the living foods lifestyle.

We've wrapped up the year with our first ever Northern Lights Tour of the Pacific Northwest and Canada. Cherie, Dan, and Martine have been greeted with a wonderfully warm reception at every place they've visited.  The FUNdamentals of Raw Living Foods™ intensives in Vancouver and Toronto ran like clockwork, with grateful students clamoring for more. We're looking forward to seeing many of them in Fort Bragg as they continue their education at Living Light. Very special thanks to our magnificently generous hosts along the way: Tom and Susan of Raw Vegan Source in Redmond, WA., Living Light graduate Vesanto Melina (coauthor with Cherie and Brenda Davis of The Raw Food Revolution Diet) in Langley, B.C., Clive and Diane of RawBC, Fatima Lachporia, Marie Larson of Toronto Sprouts (who grows the best sprouts we have ever seen or tasted), and Vivien Leung who has helped organize the whole tour. Most of all, a big, big thank you to our amazing staff back in Fort Bragg - their support and professional expertise allows us to go on the road and make this whole thing happen.

The Raw Food Doctors™ Rick and Karin Dina preceded each of our appearances by a week, and set the stage for us with their Science of Raw Food Nutrition™ courses, receiving accolades from all who attended their classes! Thank you so much Rick and Karin - you are truly a gift.

Our New Holiday Traditions class in Fort Bragg was a splendid celebration, with many "family" favorites re-invented, and some fantastic new recipes created by Living Light staff and students. Very special thanks to all who participated, whether as a student, a guest, or staff member. Living Light Center has two key positions available for individuals interested in becoming a member of our "Dream Team" and working with others in a fast-paced, creative environment in the world of healthy, organic, raw vegan foods. We are seeking dynamic, motivated individuals who would enjoy a position in a health oriented environment with the top raw vegan culinary school in the world.

CAFÉ Manager Living Light is looking for a highly energetic individual who is skilled at working with the public, managing employees, scheduling, ordering, and creating an enjoyable working atmosphere for both customers and staff. This person will be comfortable multitasking and using a POS system. A chef's palate and the ability to make delicious raw food is necessary. Living Light Associate Chef Graduate and above preferred.

Accounting/Clerical Assistant Seeking a full time clerical assistant for our accounting and human resources depts. Duties include filing, light bookkeeping, and reconciliation. Position requires basic computer skills in Word, Excel, and Quickbooks, attention to detail, and excellent work ethic.

Apple Fennel Pomegranate Salad on a Bed of Arugula with
Orange Poppy Seed Dressing and Candied Pecans

Apple Fennel Salad
Recipe by Cherie Soria
Serves 6

Dressing
1/2 cup orange juice
2 tablespoons flax oil
1/2 tablespoon poppy seeds
1/2 teaspoon orange zest
1/2 teaspoon spike (if unavailable, substitute onion powder)

Salad
3 red apples, seeded and thinly julienned
1 large fennel bulb, thinly julienned
1/4 red onion, julienned paper thin
1/2 cup celery, sliced thin crosswise
1/2 cup pomegranate seeds
1 pound arugula
1/2 cup Candied Pecans

1. Combine ingredients for the dressing in a large bowl and whisk to blend.
2. Add the remaining ingredients, except arugula and pomegranate seeds, and toss well.
3. Place arugula leaves attractively on a platter.
4. Heap apple mixture on top, garnish with Candied Pecans (see recipe), and serve immediately.

Candied Pecans
Recipe by Cherie Soria
Yields: 1 cup

1/2 cup maple syrup
1 teaspoon cinnamon
Pinch nutmeg
1 cup pecan halves, soaked, rinsed and towel dried

1. Mix together syrup, cinnamon, and nutmeg.
